Raw honey and tahini are buddies in the world of super health food. They complement each other so well in terms of taste, texture and health benefits.
We have found an unbelievably easy salad dressing recipe adapted from the renowned gourmet chef and London-based cookbook writer Yotam Ottolenghi that cleverly combines honey and tahini finished with a squeeze of fresh lemon.
Sweet Honey Tahini Dressing
1 tbsp Olive Oil
Salt and black pepper
40g White Tahini
1½ tsp Raw Manuka Honey
2 tsp lemon juice
1 small garlic clove, peeled and crushed
1 tsp each white sesame seed toasted
Whisk the tahini, honey, lemon juice, garlic and a pinch of salt, and slowly start to add water half a tablespoon at a time. At first, the sauce will look as if it has split, but it will soon come back together. Add just enough water to make the sauce the consistency of honey – around three tablespoons in total.
Drizzle this healthy creamy dressing on leafy salad greens or poached vegetables.
