Beyond Health Leatherwood Honey 250g | Leatherwood honey is the mainstay of the Tasmanian beekeeping industry. The Leatherwood tree, Eucryphia lucida, is an understorey tree found only in Tasmania and only in the rainforests. Much of it is now located in World Heritage listed state forests. Leatherwood honey from the south of Tasmania tends to be lighter in colour and the flavour less overpowering than that from the north of the state. Typically it should be a light golden colour with a Leatherwood nose and rosewater and spice like flavour that lingers on the palate. The flavours are intensified by cooking or heating such that a little goes a long way in the kitchen. It adds a level of sophistication to the pantry that no other honey on earth can match.
